Wrapped in morning mist, the Kawane mountains see large swings between day and night temperatures — ideal for fragrant tea.

Light steaming gives a clear golden liquor and a fresh, young-leaf aroma. A lovely cup after a meal.

How to brew (for two)

  1. Put 6 g of leaves (two heaped teaspoons) into a kyusu teapot.
  2. Pour freshly boiled water into a cooling bowl and let it cool to about 70–80°C.
  3. Add 140 ml of water and steep for about 60 seconds.
  4. Pour alternately into two cups, a little at a time, until the very last drop.

For a second infusion, use hotter water and pour straight away to enjoy how the aroma changes.
